BLACK PLUM MULE
- 45ml black plum syrup*
- 20-30ml Kaffir Ginger Shrub (depending on your taste preference)
- Muddled thyme
- 60ml soda or mineral water
- Muddle Kaffir Ginger Shrub together with the thyme in a cocktail shaker or pint jar with a tight-fitting lid.
- Add the plum syrup.
- Add some ice.
- Shake and strain glass over new ice.
- Top with soda.
- 1 cup sugar
- 1 cup water
- 2 ripe plums diced
- Add sugar and water to a small saucepan and heat until sugar is dissolved.
- Add 2 ripe, diced plums to the sugar mixture.
- Turn off heat and let it sit for 15 minutes.
- Strain through a mesh sieve and let syrup cool.
