BLACK PLUM MULE

Ingredients:

  • 45ml black plum syrup*
  • 20-30ml Kaffir Ginger Shrub (depending on your taste preference)
  • Muddled thyme
  • 60ml soda or mineral water

Method:

  • Muddle Kaffir Ginger Shrub together with the thyme in a cocktail shaker or pint jar with a tight-fitting lid.
  • Add the plum syrup. 
  • Add some ice. 
  • Shake and strain glass over new ice. 
  • Top with soda.

Recipe Notes:

*Plum Syrup:

  • 1 cup sugar
  • 1 cup water 
  • 2 ripe plums diced

Method:

  1. Add sugar and water to a small saucepan and heat until sugar is dissolved. 
  2. Add 2 ripe, diced plums to the sugar mixture. 
  3. Turn off heat and let it sit for 15 minutes. 
  4. Strain through a mesh sieve and let syrup cool.
